Recently I have been all about finding new cocktails.  Some people deal with stressful situations by baking or cooking.  I, apparently, mix up drinks.  Hey, to each his own.

I first came across the idea for this cocktail while Marc and I were in London and I ordered a version of it at dinner one night.  The description just said elderflower liquor, prosecco, mint, and lime.  Sounds easy enough, right?

So, when we got back to NYC I bought a bottle of St. Germain and got to work.  It turns out there is a similar cocktail called The Hugo that uses some of the same ingredients, so I worked off of that.  After some trial and error, I came up with this recipe.  Marc doesn’t like the mint aspect, so I leave it out for him.

It’s the perfect cocktail for these hot summer nights with it’s refreshing bubbles and subtle sweetness. It may just be our new go-to drink.

Ingredients

1 oz Elderflower Liquor (St. Germain)

4 oz Prosecco

Splash of Club Soda

1/2 lime

Mint leaves (optional)

Combine St. Germain and juice from the lime in a glass with ice.  If including mint muddle the mint leaves with the St. Germain and lime, then strain into a glass with ice. Top with prosecco and a splash of club soda (add more to taste).  Stir together and top with mint leaves for garnish (optional).
